Just last week, I had some leftover chicken from dinner I prepared the night before but was left with no sides to enjoy at lunch the next day. Instead of grabbing something quick from the snack drawer at the office, I decided to follow in my best friend’s footsteps and make a salad (which I never do, btw). She makes salads quite often so she gave me a bit of salad inspiration and the recipe for her grandmother’s vinaigrette! If you’re wondering what you should do with a little leftover chicken, this salad is the perfect recipe for you. The best part is, it only takes about five minutes to put together!
Cranberry Apple Salad with Grilled Chicken

Ingredients
- 1/2 ounce Craisins (half of the individually boxed servings)
- 1/2 fuji apple, medium
- 85 grams Campari tomatoes (about 2)
- 2 teaspoons olive oil
- 2 teaspoons vinegar (I used raspberry)
- 2 cups red leaf lettuce
- 4 ounces chicken breasts
Instructions
- Combine olive oil and vinegar by whisking quickly to emulsify
- Chop lettuce
- Dice apple and tomatoes
- Combine all the ingredients
- Top with vinaigrette
- Enjoy!
