Simple Curry Burgers

Blue Apron recipes make an appearance in our kitchen every now and then. We really enjoy the convenience of having specialty ingredients pre-measured and delivered to our doorstep instead of having to go out and shop for something that’s difficult to find and in larger quantities than we need. It’s time consuming and expensive. Sometimes we’re really blown away by how tasty dinner turns out and other times we’re glad we don’t have to repeat a meal made with ingredients that aren’t our favorite. The Vandouvan-Spiced Lamb Burgers were a big hit for a weeknight dinner. So much so that we were craving them again a few days later! It was then that I put my taste buds to work and put my own spin on the recipe using what we already had in our pantry. The result were savory curry burgers that simply satisfied our cravings without having to go on a treasure hunt for those ingredients we got in our Blue Apron delivery.

Serves: 4

Prep time: 30 minutes

Cook time: 30 minutes

Ingredients:

1 pound ground beef
4 potato bread hamburger buns
1 tablespoon curry powder
1 teaspoon ground cumin
3 dashes Worcestershire sauce
1 scallion
Salt and pepper, to taste
5 ounces plain Greek yogurt
1 handful of baby spinach
1 lemon
1 red Onion, diced and sliced
2 bunches of mint

Directions:

  1. Prepare the ingredients:
    • Wash and dry the lemon, baby spinach and mint leaves. Pick the mint leaves off of the stems and finely chop, reserve a small amount for garnish. Zest two teaspoons of lemon zest, and cut the lemon into four wedges. Cut the red onion in half, dice one half and slice the other. Thinly slice the scallion.
  2. Marinate the beef:
    • Use your hands to combine the salt, pepper, curry powder, ground cumin, Worcestershire sauce, diced onion, scallion, and beef. Add half of the chopped mint and mix. Form into four patties and set aside.Curry burgers
  3. Prepare the yogurt sauce:
    • In a small bowl, add the yogurt, remainder of the chopped mint, and juice from two lemon wedges. Stir and refrigerate.
  4. Cook the patties:
    • Heat one tablespoon of olive oil in a chef’s pan over medium heat. Make sure the pan is very hot before adding the patties. Brown on both sides and cook through.Curry burgers
  5. Assemble your burger:
    • Halve the buns and place them into toaster. Toast as desired. Place the cooked beef patty onto the bottom of the bun, top with as much spinach and sliced red onion as you’d like, and top with yogurt sauce and bun. Garnish with reserved mint. Enjoy!
